    Tired of gnawing on gluten-free toast or slurping down a bowl of gluten-free cereal for breakfast? Me too. I'm in a rut. An almond butter on toast rut. And though I hate to complain (the simple truth is, I adore almond butter with the white hot passion of a thousand suns, so chowing down on it daily does not qualify as drudgery or sacrifice), I used to start my day a little sexier. I used to indulge in these rich and dense Quinoa Breakfast Bars or this orange infused Quinoa Breakfast Cake. Both are beyond delish.

    The Dog Days of Summer are upon us. Gardens are exploding. Vegetables are shiny fresh and happy. From A to Z, produce is queen. 'Tis the season of abundance. You know where I'm going with this, right? Need I say more, Dearest Reader? Do I really have to wax sentimental and effusive about the humble cucurbita pepo known as zucchini? Do you crave another verbal celebration of le fabuleux courgette?

    Perhaps I should invent a tale about some beatific Italian grandmother and what she used to do with weathered buckets of fresh-picked zucchina, transforming the green torpedoes (still cozy-warm from the sun) into melt-in-your-mouth garlic laced bliss. I could go all James Frey on ya and pretend I had a childhood that included actual, fresh picked produce (in full disclosure, there were potatoes) and not canned peas and fried bologna.

Twenty-nine summers ago I cradled this soulful, musical being with new mother innocence and awe, lost in the ocean of this newborn's eyes, starting a journey called motherhood with few tools beyond my willing heart and a deep rooted conviction that I would create for him a childhood unlike my own.

    And in many ways I did. I listened with curiosity. I valued his opinion. I gave him paper and paint and books and music. I gave him the time and space and respect to create. We hung together as true companions.

    He was always good company.

    I have been sitting here in my chair, as bone quiet still as a nun in a pew at midnight, with nary a poetic turn of phrase in sight. I am trying to conjure words for strawberries. And summer. And the newly minted sensation of actually, finally, living by the sea. I keep thinking about breathing- because the ionized ocean air is so sexy gorgeous you could eat it with a spoon. And because for the first time in a long, long time I can feel myself uncoil a bit and allow a long, soft exhale to trail into the stream of salty wind that whistles through the crack of an open window above my bed as I blink awake to the whoop of a sunrise surfer ripping his way down a foamy curl. His joy is infectious. And I smile. And yawn.

    The word gratitude comes to mind.

    Not to mention, abundance. This week's farmers market was indeed abundant, tumbling wild with the jewels of summer. Boxes and boxes of fragrant strawberries. Buckets of cherries. Crates of plums. Potted herbs and June blooms- peonies and Japanese iris. So I offer you eye candy today. The gift of color. Why so not-snobby casual, you might wonder? If you could eat gluten, would you? The option is one step closer.

    Dining out is a minefield if you have to be gluten-free. 
    Would a vaccine make life easier?

    There may be a celiac vaccine in our future.

    That's the word from Down Under this month. An Australian biotechnology company called ImmusanT, Inc. is developing an immunotherapeutic vaccine for celiac disease. And guess what? The Phase 1 clinical trial went swimmingly.  Read about their positive results here at the NFCA's Celiac Central.

    It's a very odd feeling to imagine eating gluten again, after almost ten years of banishment. A decade of shunning gluten is no small feat. In a food culture that worships wheat, and elevates the gentle science of baking to both a high art (think crusty, fresh baked baguette) and a low art (say, pizza pockets), living gluten-free is akin to attempting to mambo in a minefield. Gluten lurks everywhere. Not only where you’d anticipate it (pizza, bagels, beer) but in sly, coy disguises, hiding in plain sight (soy sauce, broth, herbal tea). And even the most modest of amounts (a few stray crouton crumbs, perhaps) can trigger one’s hyper-vigilant immune system and ignite a fiery swath of digestive destruction, albeit mostly invisible to the naked eye (unless, like me, you are doubly blessed with symptoms and sport the eruptive skin rash known as dermatitis herpetiformis on your butt).

    Feelings akin to those sticky, fluttery uncertainties (if not subtle panic) one feels dodging the unbidden proposal of matrimony (or tip-toeing backwards on a Sunday morning walk of shame) begin to trickle in.

    Is this something I really want?

Whole Grain Gluten-Free Bread

    Just when you think you have it all figured out, life snakes you a curve ball and rattles your position. Just a little a bit. Just enough to make sure you're still awake, still paying attention. Because what is life about if not change? Change is the only constant. Change is our true companion.

    Nothing stays the same.

    Especially persnickety celiac tummies. I know this from readers. I know this from gluten-free bloggers. I know this from personal experience. We start at A, oblivious. We skip and stumble to D. We settle in. We think G or J is pretty cool. Then Q throws us into a tizzy.

    We discover gluten is an enemy. Then maybe milk. Or mustard. Or kidney beans. You name it. Fill in the blank. Most of us with celiac disease end up with a few additional culprits on our Need to Avoid List. Maybe not right away. But over time, many of us will have to fine tune our repertoire of ingredients.

    If we want to stay healthy.

    If we want to grow stronger, not fatter.

    If we want to feel trim, not bloated.

    Which brings me to bread. (What celiac conversation doesn't lead to bread, I ask you?)

Gluten-Free Strawberry Rhubarb Crumble

    We've been blessed with fecund weather here in West Hollywood. Love is in the air. House finches are singing. Mourning doves coo. Roses are unfolding their velvet petals. Jacaranda trees are bursting with violet-blue corollas. In other words, picnic perfect.

    I've been messing around with crisp and crumble dessert recipes this week, intent on creating an easy summertime dessert for backyard get togethers and grill side dining. So although I have featured a strawberry rhubarb crisp in the past (kissed with a hint of balsamic vinegar) I decided to play around with an alternative topping to the classic pairing of tart rhubarb and sweet ripe strawberries. Gluten-Free Whole Grain Strawberry Muffins - Summer Goodness

    Just in time for the weekend- a lovely new muffin. And not just any ordinary, ho-hum, run-of-the-mill, starchy, gluten-free muffin. Nope. A tender, whole grain, vanilla scented muffin that bursts with fresh strawberry flavor. Warm from the oven, these pleasantly grainy breakfast treats were pull-apart soft, with hot bites of juicy strawberry. Sweet- but not too sweet. I used pure maple syrup for the primary sweetener, and a mere quarter cup of organic cane sugar. And now for the best part.

    Sugar is taking a beating these days. Have you noticed? Studies left and right are accusing this sweet-talking Romeo of seducing us to a life of ruin and heartache. They've applied the words toxic, and poison. Is it really as bad they say? I'm not certain (and I'm not convinced they are, either; my sugar loving grandmother lived to the ripe old age of 93). But this I do know. Super refined corn sugar (aka HFCS) scares me. Not only because it cajoles our livers to convert the fructose to belly fat, but because it doesn't agree with me. Period.

    I knew this the first time I drank a margarita that made me balloon and bloat like a pregnant Demi Moore (and while I concur that Demi was superbly gorgeous in all her fecund glory, in all honesty, I do not desire to emulate such a look- or frankly, such a fertile state- at my tender age of post- let's say- fifty). So I took a gander at the label of margarita mix to be sure it was gluten-free. It was. But the second ingredient? High fructose corn syrup.

Creamy Penne Pasta Bake with Zucchini

    Mac and cheese gets a makeover. Just in time for swimsuit shopping (also affectionately known around here as the annual Parade of Shame). It's time to start cooking light again, and give your body a break from all that white rice pasta, butter, and double cheese. It's time to kiss bacon good-bye. Hot weather is coming, Babycakes. The beach and poolside beckon. And I am not prepared. Are you?

    I've been lax with my downward facing dogs (actually, I'm forbidden to do downward facing dogs these days, but that's another story). My lumbo-pelvic complex is cranky. My core is catnapping. And my biceps need curling. Or something like that. What it basically means is I've got some flab I need to banish. Remember that roll around my middle I call Doris? She's still here. She has not skedaddled. My usual winter weight gain of five hibernation pounds is eight this year.

    I could blame those Raspberry Coconut-Almond Bars my husband keeps making (he who can eat cookies and brownies and still sport flat abs). I could blame fructan and fructose, and various unfriendly members of FODMAPs who may be the bottom line bloat culprit in my ongoing emulation of my halcyon pregnancy days (those of you with IBS symptoms despite going gluten-free might want to look into this fructose and polyol thing- it appears to have some merit).

    But mostly I blame how much time I spend on the iMac. Sitting. Typing. Sitting some more. Social networking. The Internet is an amazing gift. But it is damn hard on the body. I'm vowing to get up and move more frequently. Shake my booty. Feel the burn. Or at least feel some heat.

    So just in case you're in the same mood, too. I've made a lighter version of the classic baked mac and cheese.

    I used gluten-free brown rice penne with rice bran for the pasta. Organic soy milk and Smart Balance vegan "butter" for the cream sauce. Zucchini and garlic and chives for a flavor boost. And it was fab. Light. Creamy. Perfect for Spring.

Gluten-Free Chocolate Cookies with Chocolate Chips

    Gluten free vegan chocolate cookies with chocolate chips
    Crunchy outside, chewy inside, gluten-free vegan chocolate cookies.

    I have a new cookie recipe to share today. A cocoa infused cookie studded with semi-sweet chocolate chips. A cookie that tastes like a brownie- if a brownie was slightly crispy and crunchy on the outside, and chewy soft on the inside. You could say, it's a brownie with a cookie texture.

    Texture is a big deal in gluten-free baking.

    It's no secret that giving gluten the boot also means giving texture, stretch, and structure the old heave-ho, right along with it. First timers bite into gluten-free goodies and pause. They chew. Their eyes widen and dart to the side as they search for a word to describe exactly what it is they are chewing.

    The word most often used to describe something gluten-free? Gummy. Or worse. Cardboard. Attributes one does not necessarily associate with pleasure. With nourishment. With flavor.

    Which is why I am here.

    These gluten-free enchiladas won the Whole Foods Budget recipe contest.

    Just in case you missed it, I'm sharing one of the all-time favorite recipes here on Gluten-Free Goddess- my sweet potato black bean enchiladas smothered in salsa verde. This budget-friendly vegetarian enchilada recipe is one of those happy accidents that spring from a burst of creative inspiration. I was craving the soft and spicy comfort of enchiladas one windy spring night back in 2003, and I had none of the usual suspects on hand (no chicken, or beef, no pinto beans).

    But I had one lovely mother of a sweet potato.

    I had a can of organic black beans in the pantry.

    Some roasted green chiles.

    One lonely lime.

    And your intrepid Mamacita at large thought, Hmmm. Why not?

    Deliciousness ensued.

    These wrapped little gems are soft and creamy and a little bit spicy- just like a certain cook, my husband would say. It's the yams, I tell him. Er, sweet potato. I can never tell the difference. In the end, it doesn't matter. What matters is how it tastes.

    And Babycakes, these are so very mucho scrumptious. Seriously. I kid you not. Make a batch for a girls' night in, or laid back Sunday brunch.

    If you've been hanging with me for awhile here on Gluten-Free Goddess, you already know how much I dig quinoa. It's one of my favorite gluten-free grains. I've grown to love- even crave- quinoa's distinct smoky-nutty flavor. More assertive than rice or oatmeal, the taste of quinoa gives gluten-free baked goods and grain dishes a certain je ne sais quoi that feels nourishing, healthy, and satisfying all at once. In a very understated, happy blue skies kind of way, I mean.

    Not in a pious eat-this-it's-good-for-you kind of way.

    Though I'm sure there are plenty of quinoa converts that proselytize its admirable qualities in the nutrition arena (and why not? Its protein profile is a vegan's wet dream) I prefer to love my quinoa on its own unassuming terms. Even though folks have dubbed her Queen of Grains and Mother of all Vegan Goodness in the Bunny Scampering Universe, I love her just because. Without projection. Without expectation. Or assumption.

    I meet quinoa where she stands. I accept her for who she is. In all her cute as a button faux grain glory. After all, her botanical name is Goosefoot. Not a very glamorous moniker. Imagine being saddled with that one.

    Hey, you! Goosefoot. That's right. I'm talking to you.

    Sweet Mother Mary. Can you imagine? No wonder she chose to change her name. Quinoa is so much sexier.

    So Quinoa, honey. What are you doing tonight? Wanna come over? I've got some Buble.

    You can even stay for breakfast.

Gluten-Free Pineapple Coconut Muffins

    April first has arrived. But you won't find any tricks up my sleeve. Unlike the greater, broader world beyond my kitchen that apparently harbors a few individuals contemptuous of living gluten-free. This was a tough week to be a celiac. Assaults ranged from the merely mean-spirited to the stunningly ill informed. There was the alleged Chef in Colorado (I say alleged, because it turns out this nudnik may have only been a waiter) ridiculing gluten-free diners (the term he favored was "idiots") and crowing on Facebook that he passes off regular pasta as gluten-free (join the lively discussion here). There was the Dr. Oz show calling gluten-free a "fad diet", asking is it "just a myth?" (in full disclosure, I believe he meant as a weight loss tool, as a certain gluten-free celebrity has been claiming in her g-free book- ironically, featured on Dr. Oz last year). And finally, there was a food blogger turned author whose envied blog-to-movie deal has apparently not cultivated much compassion for those of us stricken with gluten sensitivity. She barked on Facebook, "If I have to read one more thing about going gluten free I'm going to stomp on someone's face." And more than one person agreed with her. One of her fans (a food blogger) added, it's "too precious".

    Strap on your helmets, Campers. There's not a lot of love out there.

    I know this. You know this. Some of you have even shared stories about not only eye-rolling waiters and could-care-less food preparers, but family members sneaking gluten into what they feed you, just to "see what happens". Just to test you. Let me repeat that.

    Family. Feeding you gluten. On purpose.

    No wonder strangers feel they can openly spout contempt. If we are not respected within the bosom of our own clan, our flesh and blood, how can we expect random strangers to care?

    The truth is, they don't.

    Vegan maple-tahini dressing adorns the Queen of Spring: Asparagus.

    Spring here in BoHo infused West Hollywood means trading in your Uggs for flip-flops. And hurtling downhill on your skateboard past midnight, apparently.  For four nights in a row now I've been startled awake by the rolling wheels of wild ones zooming past our bedroom window in the wee small hours of the morning. I suspect they are taggers, or teenage paparazzi on the hunt for misbehaving Melrose prey (there have been more helicopters lately). Sleep has been edgy and restless. The season of change is afoot. Or rather on a roll.

    Which in an odd and sleep-deprived way, brings me to asparagus.

    It's a welcome signal of warmer days (and nights!) when those bundles of slender green stalks are back, standing tall in elegant rows at the local market. Erect, perky little beauties.

    My deep and abiding craving for asparagus is surprising for someone who never tendered a single bite of fresh asparagus until my third decade here on planet Earth. Yes, you read that right. Three decades. I admit it.

    I was anti-asparagus.

Gluten-Free Dinner Rolls

    Gluten free dinner bread rolls
    Fresh baked gluten-free dinner rolls- warm and tender.

    We've been slurping lots of soup this Spring while the temperatures hover well below my chilly bones preference of 72 degrees. I hate to complain about 52 degrees, but, honestly. I'm shivering like a kitten in a Steve Martin movie. This is L.A. not New Hampshire. Where is my sunshine and technicolor blue sky?

    Hiding its good humor behind wrinkled duvets of fuzzy gray clouds, that's where.

    So we make gluten-free soup.

    But the soup needs a companion. Our potage is lonely. And so I play matchmaker. I've been inviting gluten-free roll recipes to come and play. I've been flirting with their quirks and grainy idiosyncrasies, trying to be a good host. Coaxing their prickly little batters into behaving. As in, taste GOOD. And I've had some almost there success. But nothing to brag about. Nothing blog worthy.

    Until today. These rolls are a balance of whole grain flavor and softness. Just crusty enough. These were tender and lovely warm from the oven. Not gummy. Not heavy. Not too grainy.

    Just right.

Karina's Chocolate Truffle Cake

    Truffle Cake is a flourless chocolate cake worthy of Spring.

    The intricate lace of bare oak branches reaching to the piece of schoolyard sky framed by my kitchen window is softening, filling in with bursts of tender green leaves so young and sweet you miss them at first glance. Spring has arrived. The oaks say so.

    To celebrate the season of reawakening, I say we bake a cake.

    Yes, another cake. I know, I know. I baked a luxurious Coconut Layer Cake for you just last week. But. It was a cake with flour (albeit gluten-free flours). And what do I feel like baking this week? A flourless cake. A cake so rich it tastes like a truffle. Not the infamous pig snuffled treasure. No, Darling. The chocolate truffle. That heavenly impostor, hiding in the guise of that woodsy French piggery fungi. Spoonfuls of deep, dark ganache rolled in cocoa powder (to look like dirt, of course).

    And I didn't want just a chocolate cake topped with ganache, either. I wanted to bake the ganache itself. I wanted the cake to taste like a sweet and satiny truffle- I wanted the cake to live up to its name. Truffle Cake inspires expectations. So I fiddled around with my Flourless Chocolate Cake recipe and rustled up a divine and creamy chocolate cake so special you'll want to share it with company. It's simply too good to keep to yourself. Try it. It's shockingly easy to make. Just give yourself time to make it ahead. It is at its best chilled overnight.

    Silky satin chocolate cake with a dusting of dirt- I mean- organic cacao powder with a secret ingredient. Raw maca powder.

    Throw in a little superfood magic. Why not?

Gluten-Free Bread: Spotted Dog (and tips on baking gluten-free)

    This Spotted Dog Irish bread is yeast-free and gluten-free.

    If I call this new bread an Irish soda bread, traditionalists will snicker. Raisins are not traditional in an Irish soda bread, you see. If a yeast-free soda bread has raisins in it, it's called Spotted Dog. I never knew this, growing up on the white clapboard wilds of the Connecticut shore. I was blithely ignorant of this quaint canine moniker, despite a hefty streak of familial Irish blood. We ate more pierogies than Irish soda bread. So when I started baking, my Irish soda bread had raisins. Why not?

    When it comes to traditions, I admit, I'm an upstart. I wiggle and chafe beneath constraint and "should" like an itchy little girl with pinching new shoes. I admire traditions. From afar. At least, in theory. In an abstract, symbolic way. The meaning and the message is more interesting to me than formula. When it comes to formula, I usually prefer to wing it.

    Which is why I enjoy gluten-free baking.
